Keto Cherry Fat Bombs

Well hey- Happy New Year!

Technically, it is January 2nd, but I’m feeling like happy new year greetings can last at least a week.

I’ve been thinking a lot (a lot a lot) about 2017, resolutions (yuck- hate that term!), goals for 2018, and what I want out of this bright shiny, fresh new year.

When I look back at 2017, I can see that things moved quickly, and got a bit hairy. The year is marked in a big way, by the birth of our daughter in June. In some ways…. I really can’t remember much before she was born.

I remember potty-training.. way back last January. Then Warner’s 2nd birthday…. then being really grumpy that our house was a wreck as Whitney refinished our bathroom in May. And that’s really about it.

Wren finally came, 6 days overdue. (And yes, the bathroom was finished in plenty of time!). Good thing, because our planned home-birth turned into an unplanned, unassisted home-birth, meaning she was delivered, by Whitney almost exactly two hours after my first contraction. I haven’t decided to write the whole story out, so in case I don’t get to it- we all came out of it just fine. Perfectly, in fact.

At first it was really a struggle for me to adjust to two kids. I know Warner struggled with it too- quite the change for a two year old… one day your the center, and you take one evening off to enjoy yourself at grandmas, and when you come home the next day, you are suddenly NOT the center anymore. He’s probably thinking, well now, what the HEY just happened here?? I’ve been working with the owner, Eliane, for a few months now, AND SHE IS AWESOME. Not perfect, not easy, but certainly manageable, and even fun! Now that Wren is 6 months… she likes to coo and sing. Lately Warner has taken to sitting in his little wooden chair and “reading” to her (he has some of those darn books memorized!), while she coos, sings and laughs. If that doesn’t bring Hallmark-style tears to your eyes and make your heart swell three more sizes, than frankly, I doubt anything will!

Anyway, then all of the sudden it was like, October, and I was back at work. And then it was November, time for Thanksgiving and the holidays. I noticed that I was not feeling so hot, really run down, grumpy, tired. If you know me in real life, you probably could / can tell by looking at me that I just wasn’t right. I did a little research, a little reading, polled some of the crunchy mom groups I’m in, in hopes of figuring out what is going on.

No solutions yet, although my best guess is some sort of burnout brought on by pregnancy and a pretty crazy year (I’ve left out a handful of things.. I’ll get to them!!). Stuff you’ve probably heard of, maybe it’s a slow thyroid, or adrenal burnout, some hormone imbalance… maybe a combination. I have a consult here in a couple weeks to hopefully shed some more light on the situation (and solutions!).

Here is what I’ve been reading:

In the meantime, I was pretty desperate to feel even a little bit better. So, I made a couple minor changes:

Cut out coffee / caffeine. YIKES. All the info I read said TO QUIT THE C DRUG. Ugh. I guess stimulating or over-stimulating your already tired glands with daily caffeine doses can wear them out more / faster / harder. It totally sucked for about a week, tension headaches and all. I did wean myself off with this blend of mushroom coffee. I’m kinda waiting on my consultation to make any more changes, but cutting out caffeine was pretty much a no brainer. I do plan to make my own concoction out of chicory and dandelion root… supposedly it is a good substitution, but I’ll be the judge of that!

Started a multi-vitamin. Since cutting out grains, refined sugar and hydrogenated oils, I’ve also been a huge skeptic of “multi-vitamins. The term actually reminds me off Centrum Silver… and those yellow, disgusting grainy cheap-o drugstore vitamins. So, I’ve been supplementing with individual supplements, based on what I think I need- krill oil, vitamin d, folate (when pregnant), pro-biotics, etc. When I read The Mood Cure, she suggested finding a quality multi-vitamin just in case you are deficient in something a little more obscure. I found MaryRuth Organics- and I FREAKING LOVE THEM. So far. I’ve been taking them for about a month now, and am super SUPER happy with them. Not only do they make awesome supplements, but the customer service is superb too! So now I take my MaryRuth’s in the morning (raspberry!) and at night (coconut!). I’m also supplementing with Krill Oil and quite a bit of Vitamin D.. on because I’m pretty sure I’m getting ZERO direct sunlight at this point. (The high yesterday was negative 10. NO THANKS).

I also changed my work arrangements, and will just be working from home a few hours a week… and a couple weekends for events. When maternity leave was up in September, I went back to work three days a week. Which is pretty much the perfect amount of time to screw up everyone’s schedule at home, and not get anything substantial done at work. I love the work I do there, but I had a nagging feeling that even more important work was waiting at home.


So now it’s January, and I’d like to remember a little more about this year. I have some neat art projects lined up, I’m working from home, I’m attempting to go to yoga regularly. 2017 felt kinda like a crash and burn sort of year, and I’m hopeful that 2018 is more of a water and grow kind of year.

I really sat down to write out a few intentions that I have for 2018, and instead a reflection of 2017 spilled out. I guess I’ll hit 2018 in my next post… with some chocolate mint power bars. Does that sound fair? That was kinda a lot to sit through for a recipe, but this is is a really good recipe. Plus, maybe you scrolled past all those words just to get to this point. No worries.

Keto Cherry Cherry Fat BOMBS. Add some cocoa powder, make them chocolate cherry fat bombs. And let me know how those turn out!

 

In a mini food processor, blend the cherries until mostly smooth (do not add water).

 

In a small pot, combine the coconut oil and almond butter.

Heat the pot over medium-low until coconut oil is just melted. Any further and the almond butter will burn.

 

 

 

Add the stevia and whisk the pot ingredients together.

Prep your silicone molds by spraying with coconut oil if needed.

 

 

Pour the almond butter mixture into the molds leaving a bit of room at the top.

 

 

 

Spoon the cherry mixture into the molds pressing it down into the almond butter. Divide evenly.

Place in the fridge to set for sixty minutes.

Makes 12 fat bombs (depending on mold).

When ready to eat, let thaw for a couple of minutes on the counter and enjoy!

Equipment:

Silicone Baking Mold

Ingredients:

  • 3/4 cup coconut oil
  • 1/3 cup almond butter
  • 3/4 cup frozen cherries
  • Stevia to taste (about six drops or half a packet)


Instructions:

  • In a mini food processor, blend the cherries until mostly smooth (do not add water).
  • In a small pot, combine the coconut oil and almond butter.
  • Heat the pot over medium-low until coconut oil is just melted. Any further and the almond butter will burn.
  • Add the stevia and whisk the pot ingredients together.
  • Prep your silicone molds by spraying with coconut oil if needed.
  • Pour the almond butter mixture into the molds leaving a bit of room at the top.
  • Spoon the cherry mixture into the molds pressing it down into the almond butter. Divide evenly.
  • Place in the fridge to set for sixty minutes.
